Peanut Butter Pinwheel Candy

Ingredients

1 1/2 pounds powdered sugar
1/2 cup cold unseasoned, mashed potatoes
1/4 cup butter

Preparation

Mix sugar, potatoes, and butter until forms a soft ball. Roll out on waxed paper to 1/4 inch thick. Spread generously with peanut butter and roll up jelly-roll style. Wrap in wax paper and refrigerate 2 to 3 hours or until firm enough to slice. Slice 1/4 inch thick. Place on wax paper.
