Chocolate Almond Banana Muffins

Ingredients

2 larges bananas, mashed
1 teaspoon baking soda
1 teaspoon baking powder
1 tablespoon unsweetened cocoa powder
1/2 teaspoon salt
1 1/2 cups flour (I use 1 cup whole wheat and ½ a cup of all purpose fl

Preparation

Lightly beat the margarine and sugar. Add beaten egg, vanilla essence and mashed bananas. Mix well and set aside.

In a separate bowl, mix together baking soda, baking powder, cocoa powder, salt and flour.

Make a well in the dry ingredients and add the liquid mixture. Mix wet and dry ingredients all together; be careful not to over-stir!

Throw in the chopped almonds and mix. Mixture would be lumpy.

Pour into greased or lined muffin tins and bake in pre-heated 350 degree oven for approximately 20-25 minutes or until a toothpick inserted in the center comes out clean or the muffin springs back when you touch it.
