Double Chocolate Cookies with Ginger and Cayenne
Ingredients
Dry:
1-1/2 Cups sifted all purpose flour
1 Cup sifted Dutch cocoa powder
1-1/2 tsp cinnamon
1 tsp baking soda
1 tsp cayenne pepper
1 Cup shaved dark chocolate (70%) – or chocolate chips
1 Cup sugar
1 Cup brown sugar
Wet:
1/2 Cup plus 1 Tbsp canola oil
2 large eggs
2-1/2 Tbsp grated fresh ginger
3/4 Tbsp vanilla extract
2 tsp warm water
1/2 Tbsp pink or white sea salt
1 Tbsp sugar
Preparation

Preheat oven to 375°F.

Mix dry ingredients together well in a large mixing bowl.

Whisk wet ingredients together in a separate mixing bowl.

Mix sugar and salt together in a small bowl and set aside until required.

Lightly grease a parchment lined baking sheet with butter.

Mix wet and dry ingredients together well.

Using a small ice cream scoop, scoop dough onto prepared baking sheet.

Flatten with the palm of your hand until about 3/8″ thick.

Sprinkle with sugar and salt mixture.

Bake for 11 minutes.

Remove from oven and cool for 5 minutes before removing cookies to a cooling rack.

Allow to cool completely.
