Coq Au Vin

Ingredients
2 tablespoons oil
1 tablespoon chopped onion
1 tablespoon flour
1/2 cup red wine
1/2 cup clear chicken broth
1 garlic clove - crushed
1 bay leaf
1/4 teaspoon thyme
12 smalls white onions
1 cup sliced mushrooms
1 pound bacon
Preparation

In a large, heavy skillet, cook bacon and chopped onion in heated oil until slightly browned. Add chicken and cook until brown.

Add wine, chicken broth, garlic, bay leaf, thyme, white onions, and mushrooms.

Serve with boiled potatoes.

Followed the directions to a T and it turned out beautifully! Every bit as good as any I've had in expensive French restaurants.
