Italian Green Bean Salad

Ingredients
6 tablespoons olive oil
1 teaspoon Dijon mustard
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup Parmesan cheese
1 cup Cherry tomatoes, halved
1 cup green or black olives
2 canned anchovies, chopped
Preparation

Cook beans until al dente. Drain well and cool. Add onions and toss to mix.Mix remaining ingredients to make a dressing in a small bowl. Pour over beans, add Parmesan cheese and toss to mix well. Arrange on a bed of lettuce and add tomatoes, olives and anchovies.
