Ingredients
1 head of kale
Olive oil spray
Kosher salt
Preparation
1
Preheat oven to 450 F.
2
Thoroughly wash and pat dry the kale or dry in a salad spinner.
3
Remove the woody stem by folding over each leaf until the stem is exposed. Then slice the stem off by running your knife along the seam between the leafy part and the stem.
4
Tear each leaf into bite-sized pieces.
5
Arrange kale pieces on a baking sheet.
6
Spray the kale lightly with olive oil (or vegetable cooking spray).
7
Sprinkle with good quality salt, such as Kosher or sea salt. Add cayane, black pepper or paprika to taste.
8
Bake in the oven for approximately 20 minutes or until crisp (watch closely so that they don't burn).

This also works if you toss them in a frying pan for 5-10 min on medium heat. I've also added toasted cherry tomatoes and goat feta for a tasty warm salad.
