Smoky Black Bean Dip

This recipe was entered in The Foodista Best of Food Blogs Cookbook contest, a compilation of the world’s best food blogs which was published in Fall 2010.

Ingredients

2 (15-ounce) cans organic black beans, rinsed and drained
1 1/2 teaspoons adobo sauce (chipotles in adobo sauce can be found in your Mexican food section)
1 teaspoon salt
1 teaspoon garlic pepper, or other all purpose seasoning
2 tomatoes, diced
Juice of 1 lime
1/2 jalapeno (scrape out the seeds if you are sensitive to spice)
1/2 red onion, diced

Preparation

Place beans, adobo sauce, salt and garlic pepper in a food processor, and pulse until just broken up.

Add the tomatoes, lime, jalapeno, red onion and cilantro into food processor with the beans and pulse until just combined.

Serve with a fresh grated cheddar, cilantro, a dollop of low fat sour cream and some organic blue corn chips.

This was a super-simple dish to throw together as part of our Super Bowl party last weekend. I substituted a can of shoepeg corn for one of the cans of black beans, tossed in a bit of cumin and increased the amount of adobo sauce. If only I could have gotten my hands on some flavorful tomatoes! I can't wait to try this again with ingredients from the farmer's market.

This is Part Dos of my Healthy Twist on Super Bowl Treats. It is pretty hard to top my Lightened Up Boneless Buffalo Wings, but this dip comes pretty close. Next to boneless buffalo strips, 7 layer dip is my next favorite Super Bowl snack. However, with all the cheese, sour cream, guacamole and re-fried beans, it is not exactly the best treat for your body. So I decided to put my own spin on 7 Layer Dip.

This black bean dip gets a wonderful spicy and a smoky flavor from chipotles and adobo sauce, and the addition of tomatoes, cilantro and lime freshens the dip making it reminicent of pico de gallo. Topped with a little bit of shreeded cheese and low-fat sour cream, your fellow football watchers will never miss their old 7 layer dip.
