Cal de Verde
Ingredients
4 cloves garlic, chopped fine
1 onion chopped fine
4 big or 5 medium sized potatoes, peeled & grated
1 veg. maggi cube (optional)
7-8 leaves of palak/spinach, cut in thin strips
1 small grated carrot (optional)
¼ cup grated cheese
1/2 tsp pepper freshly ground
1 tblspn finely diced red and yellow capsicum (optional)
2 green chilies (optional)
1 tsp Oil (or butter)
Preparation

In a thick bottomed pan heat the oil and add fry the garlic till crisp.

Add the onion and fry till translucent.

Add 4 -5 cups of water and bring to a boil.

Add the grated potato. At this point I switched off the gas and dipped the immersion mixer and blended the soup till it was quite smooth.

Boil well.

Just before serving add the palak/spinach, carrot, capsicum, green chilies and grated cheese.

Swirl and serve hot. Today we are having it just plain but you can serve it with toast or garlic bread or cheese toast.

P.S. All that are marked optional are my additions you can make do without them but are recommended.

We are supposed to go to Catholic wedding today night.
In Goa a Catholic wedding is called”KaJar” there are nuptials in the church and then a reception in hall. There is lot of music, dance and food. Since food will be served late and the kids will be stuffing themselves with soft drinks and snacks served earlier I wanted the kids to eat something filling and hot.
We have one soup that is quite well known “Cal de Verde”! Meaning Soup of Greens in Portuguese.
