Combine the water, sugar, and thyme in a small pan. Place over medium heat and stir until the sugar dissolves. Boil without stirring for 1 minute. Remove from heat and allow to cool.

Place peaches in a blender or food processor, along with the lemon juice,salt and the thyme simple syrup. Process until the mixture until smooth.

Freeze or process in ice cream maker according to manufacturer's instructions.

This would be great served in a tall glass and topped with Moscato or Proseco! Think 4th of July!
