Healthy Blueberry Muffins

Ingredients

2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup oat, bran
1/2 cup wheat, germ
2 teaspoons ground cinnamon
1 cup apple sauce
1/4 cup orange juice
2 cups frozen blueberries
1 tablespoon canola oil
2 teaspoons vanilla, extract
2 egg, whites, only
3/4 cup maple syrup

Preparation

Preheat oven to 400 degrees.

Mix all dry ingredients. Gently stir blueberries into dry mixture.

In a separate bowl, mix all remaining ingredients.

Gently combine both bowls, but don't over mix.

Spoon into greased muffin tin. Bake for 25 minutes or until golden brown.
