Sweet and Spicy Fennel and Cucumber Salade

Ingredients

3 gourmet cucumbers (peeled & sliced)
5 baby carrots (sliced)
1 red onion (sliced)
1 jalapeño (sliced thin without seeds)
2 cloves garlic (crushed)
1 head fennel (sliced thin)
For the dressing,
2 tablespoons heaping orange marmalade
1 cup quarter white vinegar
1 teaspoon half fresh ground chili paste
1 cup quarter olive oil

Combine all salad ingredients in bowl.
