Watermelon Halwa

Ingredients

½ medium sized Watermelon
1 cup sugar
5-6 Cashew-nuts
2-3 Pistachios
4 tbsp Ghee
2 tsp lemon juice
1-1/2 tsp Cornflour
Few drops of Saffron essence or rose essence

Preparation

Remove the green skin and deseed the watermelon.

Cut in into cube shapes.

In a blender add watermelon cubes and sugar.

Blend it lightly (If not using a blender you can even mash it manually).

Pressure cook this mixture without adding water, up to 1 whistle.

In a small bowl mix corn flour with 3 tbsp of water and mix well and set aside. (No lumps should be formed).

In another pan heat 1 tbsp of ghee.

Add cashew and pistachios and fry till light brown.

Pour the water melon mixture and mix well.

Let the mixture boil.

Once the mixture starts to boil add corn flour mixture and mix well.

Keep stirring continuously.

As you are stirring keep adding the remaining ghee in regular intervals to watermelon mixture.

The mixture gets thicker.

Now add lemon juice and stir continuously.

Keep doing this till the time halwa like consistency (jelly like) is formed.

You can see the ghee separating from mixture.

This is when halwa is ready.

Add the essence of your desired flavor, mix well.

The watermelon halwa tastes best served warm.
