Greek Goddess Salad

Ingredients
1/2 cup fresh parsley (about 1/2 a store-bought bunch), minced
20 pitted kalamata olives, sliced into circles
2 cloves garlic, smashed with flat of knife and minced
1 large cucumber, chopped
1 red bell pepper, seeded and chopped
1 large tomato, chopped
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
3 1/2 ounces reduced-fat feta cheese

Throw everything into a bowl that has a lid.

Gently stir it all up.

Cover and refrigerate for at least an hour.
