Luscious Chocolate Cake

Ingredients

1 tablespoon instant coffee granules
125 mls whipping cream (30%% fat)
3 XL eggs, separated
1 cup caster sugar (200 ml cup size)
1 cup self-rising flour (200 ml cup)
1 cup sweet instant hot coco powder
1 tablespoon orange liquor or brandy (optional)
100 grams dark chocolate (at least 70 %% cacao)

Preparation

Preheat oven to 180 C ( I used turbo mode)

Grease a square or round 20 X 25 baking tray; can be baked in any shape or as cupcakes.

Mix coffee powder and hot water; add cream and set aside.

Whisk egg white with sugar to medium peaks.

Sift flour and coco powder together twice.

In a bowl mix egg yolks and oil; add coffee mixture. Slowly fold egg whisked egg white into egg yolk mixture.

Add flour mixture carefully; fold it in until all combined.

Bake it in preheated oven.

While baking, bring the cream to a boil, add liquor, add chocolate mix well to get nice, luscious cream

Pour the cream on the cake while the cake is still hot.

You are done!!! Reword yourself- pour a cup of good coffee, and celebrate your baking skills.

About

The recipe was given to me long ago and was modified along the years as my experience in baking improved. It is part of my cooking not book collection for years. Long time favorite of children and the "oldies" alike.

The cake is very easy to make and very forgiving . If you are not a fan of whipping or whisking, you can skip it; just whisk the egg with sugar to soft peak and combine all the rest as it appears in the list.

The only problem with this easy to do cake is that it doesn't last long... mmm. It is so good, you keep standing by the tray. I suggest a cake bodyguard, if you need to keep it for an event. Or bake two in one go. ;)

Can be served warm or cold; vanilla ice cream is perfect companion.
