Spinach, Bacon and Gruyere Frittata

Ingredients
3 teaspoons olive oil
1/2 cup thinly sliced shallots
2 packages cups baby spinach
1/2 cup grated Gruyere

Add 1 teaspoon of the olive oil and the shallots to skillet. Saute until soft and slightly golden, about 3 minutes.
