Baked Wheatbran-Coated Veggie-Bean Crunchies

Ingredients

1/2 cup Garbanzo Beans (Chickpeas), cooked and mashed
5 Multi-colored mini peppers, diced
2 Cubanelle peppers , diced
1 handful Sweetpea, cooked
1 teaspoon Cracked pepper, or to taste
Salt, to taste
1 cup Wheat Bran, for coating and mixing
1 tablespoon Olive oil

Preparation

Preheat the oven to 350 degrees F.

On a greased cookie sheet, arrange the diced peppers and bake for 10 minutes.

In a shallow pan, add the wheat bran and set aside.

In a mixing bowl, add the cooked chickpeas and sweetpeas and roughly mash. Add the pepper, salt and baked peppers.

Gently mix all the above ingredients and check for salt prior to making even sized balls.

Coat the balls in wheat bran and arrange it on a cookie sheet.

Bake for 10-15 minutes and serve hot with ketchup.

This recipe was an experiment that turned out as a party-hit. Wheat Bran is packed with fiber, and baking with it makes for a healthy snacking.
