All Blue Potato Salad

Ingredients
Preparation

Peel potatoes and dice them.

Place diced potatoes into cold water. Bring to a boil. Cook until tender.

Drain, rinse in cold water, drain again.

Add mayonnaise, Dijon, fresh dill, sweet onion and vinegar to a bowl and mix well. Taste for seasoning.

About
All blue potatoes are quite bizarre to cook with, because of their color, but they are delicious!
