Broccoli slaw is a wonderful way to enjoy the seasonal taste of broccoli, in a different dish. This recipe is also great for using up the broccoli stems too.
I (Amy) peel any stems that are too thick, to remove the tough outer skin. If the head of the broccoli isn't too large, this isn't necessary. Just taste a bit to see.
Broccoli Slaw with Dried Cranberries
1 pound broccoli slaw mix
1/4 cup dried cranberries
1 package Ramen noodles
1/4 cup sugar
