From the recipe files of one our favorite contributors, Angela LeMoine, comes this not-so-traditional-style corned beef dinner. She roasts some sweet potatoes and adds a side of warm slaw to complete this transformed meal. Thanks Angela!
Not So Traditional Corned Beef and Cabbage
6 lb piece corned beef brisket
water
1 bay leaf
1 Tbsp whole peppercorns
For the Warm Cabbage Slaw:
1 bag coleslaw mix (shredded cabbage and carrots)
1/2 small red onion, diced
ladle full of the corned beef cooking water
