These incredible Irish coffee cupcakes from Whitney in Chicago are the classic cocktail reincarnated. Decadent chocolate cupcakes are filled with a rich Irish cream flavored cream cheese and topped with a whiskey chocolate glaze. These boozy cupcakes are great to bring to any St. Patty's Day celebration. Whether you are Irish or not, Irish coffee cupcakes are a must-have on March 17th.
Ingredients:
Cupcakes
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup strong brewed coffee
6 tablespoons unsweetened Dutch-process cocoa powder
1/2 cup unsalted butter, cut into pieces, room temperature
1 1/4 cups packed brown sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
Filling
4 ounces cream cheese, at room temperature
4 tablespoons salted butter, at room temperature (or add a dash of salt if all you stock is unsalted like me)
6 tablespoons powdered sugar
1 tablespoon plus 1 teaspoon Irish cream liqueur (like Baileys)
Glaze
4 ounces bittersweet or semisweet chocolate, chopped
1/4 cup heavy cream
2 teaspoons light corn syrup
2 tablespoons whiskey (I used more like 1 1/2)

This looks so delicious. I have to admit that preparation method is not very simple, but it is worth of trouble I suppose. These cupcakes are just perfect.
