Gazpacho

Ingredients
4 cups tomato juice
1/2 cup finely-chopped onions
1 clove garlic, minced
1 medium bell pepper, minced
2 teaspoons honey (optional)
1 medium cucumber, peeled, seeded and minced
2 scallions, minced
juice of 1/2 lemon
juice of 1 lime
1 tablespoon finely-chopped basil
1 tablespoon finely-chopped tarragon
1/2 teaspoon cumin
1/4 cup minced fresh parsley
3 tablespoons olive oil
salt, to taste
pepper, to taste
cayenne, to taste
2 cups diced fresh tomatoes

Combine all ingredients in a large pot or bowl

Refrigerate until ready to serve.
