Gluten Free Dough on the Rise

Thanks to the Bendigo Inventor awards, Terry Hunter won $25,000 for a revolutionary gluten free dough. The mixture contains 12 ingredients and apparently it tastes exactly like traditional wheat bread. It took Mr. Hunter over 10 years and 800 trial loaves to perfect his recipe. The bread mix is now available online, and it is also dairy, nut, and egg free. 

Although, this mix appears to be just like traditional bread, this nutritionist is not sold on the quality of the ingredients. It contains corn starch, rice flour, and dextrose, which are all sugar as far as the body is concerned. This would be better as an occasional treat, rather than a staple in your gluten free pantry.

I gotta say, this has me SO steamed. It's not that there is ANOTHER gluten-free baking mix, but that it contains the same crappy ingredients we see time and time again in gluten-free foods. Now, I can't find a list of ALL TWELVE ingredients (twelve, really??) but on top of the issues you mention (dextrose, rice flour and corn starch) with sugar, this also apparently contains soy- NOT a health food, folks! Also, why, (WHY WHY WHY) do people continue to make these types of complicated, hard to digest products for people with gluten intolerance or celiacs. This even says it's suitable for those with autism, and trust me, IT'S NOT! People with gluten intolerance, celiac, autism, autoimmune, ADD/ADHD, mental issues, etc all have DAMAGED GUTS. They don't need fibrous foods- it does MORE damage. They don't need 12 different ingredients to digest at a time, and they certainly don't need mixed flours, or flours at all! To heal the gut lining, a special diet of grassfed/pastured meats, homemade bone broth, veggies (non-starchy) and good high quality fats must be eaten, a la GAPS Diet. It drives me, as a nutritional therapist, completely batty when I keep seeing products like this time and time again with sub-par (possibly some GMO) ingredients, mixed together making it even harder to digest and with rancid damaging vegetable oils, ESPECIALLY soy! UGH! Seriously, folks, stop trying to find a bread substitute (which commercial bread is not healthy regardless of wheat) and just eat real food. Great article- thanks for letting me rant, lol.
