Get a wiggle on (that's cowboy speak for "hurry") and make this tasty good brisket! It's flavored with a cowboy's favorites: bacon drippings and strong coffee.
4 pounds beef brisket, preferably first cut
3 cloves garlic, slivered
3 cloves garlic, minced
4 large yellow onions, thinly sliced, divided
1 cup cider vinegar
1 ½ tablespoons bacon drippings
1 cup espresso or strong black coffee, divided
Sea salt and freshly ground black pepper
½ cup water
