The mighty egg is a nutrient dense super food, because it's loaded with beta-carotene, protein, lecithin, omega-3s, vitamins, and minerals. As if that weren't enough, researchers from the University of Alberta have found that eggs also have antioxidant properties which may help in the prevention of cancer and heart disease.
"After analyzing the properties, the researchers determined that two egg yolks in their raw state have almost twice as many antioxidant properties as an apple and about the same as half a serving (25 grams) of cranberries." When fried or boiled, the egg's antioxidant properties were cut in half, but even in the cooked state, they still rival the apple's benefits.
There are more studies in the works, because it's believed that eggs may contain even more antioxidants and other potential benefits than previously known.
