This Mexican spiced banh mi is the second recipe for sandwich week. A banh mi is a Vietnamese sandwich made with grilled meat, cilantro, and pickled carrots and daikon. Some recipes even include pate. This recipe has the flavors of Mexico but all the traditional Vietnamese components. The meat is Mexican carne asada which is paired with pickled apples, beets, and carrots. This is a sweet and spicy sandwich that your friends and family will love.
3/4 pound skirt steak
1 tablespoon cumin
1/4 teaspoon sea salt
3 tablespoons mayonnaise
2 carrots
1 red beet
salt to taste
fresh ground black pepper to taste
1 piece baguette cut into four
