I have begun to notice that markets are carrying flavored butter. I find it ludacris that people are paying up to five dollars for something they can easily make themselves. Compound butter is a mix of butter and flavorings. You can add herbs, bacon, cheese, chilis, even spirits. It goes great with a nice piece of steak, melted on a baked potato, or eaten plain with a piece of toast.
Herb Compound Butter
Ingredients:
2 sticks butter
2 tablespoons fresh chives, chopped
1 tablespoon thyme, chopped
1 tablespoon parsley, chopped
1 tablespoon rosemary, chopped
pinch of salt and pepper
Directions:
Chop the butter into small chunks. Leave the butter out for a few minutes to allow it to get soft but not spreadable. Chop the herbs finely. This can be done with a food processor or by hand. Mix butter and herbs until fully incorporated. Remove butter from bowl and spoon onto parchment paper or plastic wrap. Roll into a log and twist the edges to seal the butter. Chill for at least 2 hours.
