Huevos Rancheros are a hearty breakfast that help you get your morning started. Tortillas are layered with beans and then a freshly fried egg is placed on top with salsa, avocados, and queso fresco (similar to feta). This version uses salsa verde (green salsa) instead of the traditional red, feel free to add your favorite salsa. Fresh beans are always best but canned will work well in this recipe too.
Salsa Verde Huevos Rancheros

Ingredients:
2 tablespoons corn oil
4 corn tortillas
4 eggs
1 cup black beans (warm, or jalapeno spiced black beans)
1 cup salsa verde (warm)
1 avocado (stoned, scooped and sliced)
1/2 cup queso fresco (or feta, crumbled)
1 handful cilantro (chopped)
2 tablespoons corn oil

Directions:
1. Heat the oil in a pan.
2. Lightly toast the tortillas in the oil and set aside.
3. Fry the eggs sunny side up.
4. Place a tortilla on each plate and top with the black beans followed by the salsa verde, eggs, more salsa verde, queso fresco, avocado and cilantro.
