Succulent Sweet Potato Casserole

Sweet potatoes pack a nutrient wallop and are a perfect way to satisfy your sweet tooth.

This casserole is loaded with quality fat which balances the sweetness and makes for a satisfying snack or treat.

2 pounds sweet potatoes ( 3 cups mashed)
1/6 cup agave nectar
7 drops of stevia liquid
1/4 teaspoon sea salt
2 large eggs
4 tablespoons butter
1/2 cup coconut milk

Topping:
3/4 cup pecans, chopped
2 tablespoons agave nectar
4 tablespoons butter, melted
1/2 cup gluten-free flour
