Legendary chef Charlie Trotter will close his eponymous Chicago restaurant after 25 years in August 2012. The decision was not financial (Trotter says the restaurant has always been profitable), but personal. The chef plans to take some time to travel with his wife and will enroll in further academic studies.
Trotter is considered one of the finest chefs in the United States. The Atlantic examined a number of food trends he started. The chef plans to keep his other property, Trotter's To Go, open during his "sabbatical" and plans to open another restaurant someday.
“I just had to put the flag in the sand and say I’ve got to go for this; otherwise, I never will. If I don’t go for something while I’m in the prime of my life and I have the means to do it, well, why wouldn’t I?" he told the Chicago Sun-Times.
August 31 will mark the last day of service for Trotter's.
