Meatless Monday: Spicy Moroccan Chickpea Spaghetti

This spicy Moroccan chickpea spaghetti from Daily Unadventures in Cooking is an interesting twist on a pasta dish.  This totally vegetarian meal is composed with warm North African spices like cumin and cayenne pepper and fresh mint.  The sauce is created by mixing tomato sauce with buttery chickpeas, spinach, garlic, and roasted red peppers.  Spaghetti is the pasta of choice but you can use whatever shape is already in your pantry.  Spicy Moroccan chickpea spaghetti is a delicious dish that is guaranteed to tantalize your taste buds.

Ingredients:

1 teaspoon olive oil
1 onion, sliced
1 garlic clove, chopped
1 teaspoon cumin
1/8-1/4 t teaspoon cayenne
1 teaspoon honey
1 roasted red pepper, thinly sliced(*)
1 400 ml can tomato sauce
1 400 ml can chickpeas
4 cups packed baby spinach
1 handful fresh mint
The juice of half a lemon
100 g whole wheat spaghetti
