To kick off National Salad Month, Foodista is sharing a recipe for a wonderful bacon and bleu salad. This salad is perfectly balanced: tender baby spinach is paired with smoky bacon, tart granny smith apples, and salty blue cheese. You can serve this bacon and bleu salad as a starter course or add some protein to make it the main meal. What is you favorite salad? Ingredients:
2 handfuls baby spinach leaves
4 slices purple onion, halved
1/2 Granny Smith apple, cubed
2 slices bacon, cooked and crumbled
2 ounces bleu cheese, crumbled
3 tablespoons extra virgin olive oil
3 tablespoons balsamic vinegar
freshly ground pepper to taste
