Green Zebra salsa is a delightfully delicious dish. Green Zebra tomatoes are an heirloom varietal with dark green and yellow striations. You can pick them up at some grocery stores and farmer's markets. Rather than going for the usual Roma or Beefsteak tomatoes, heirlooms contain a wide range of flavors from the intensely sweet to bitter to fruity. The Green Zebra can be described as spicy or piquant which makes it perfect for a salsa. Serve this dish over tacos, in your salad, or a top your favorite grilled chicken.
Ingredients:
1 medium avocado chopped
3 Green Zebra tomatoes chopped
1 ripe mango chopped
1 medium onions chopped
1 teaspoon jalepeno pepper finely chopped
2 tablespoons chopped fresh cilantro
1 tablespoon fresh lime juice
1 tablespoon canola oil
(or other vegetable oil)
Salt to taste
Freshly-ground black pepper to taste
Directions:
In a small bowl, combine tomato, mango, onions, jalapeno, cilantro, lime juice. Add salt to taste.
Onions will be "cooked" with the lime juice, so flavor is not that strong. Salt is important.
Refrigerate 12 hours for flavors to blend.
Add the avocado just before serving.
