Black eyed peas are a staple in Southern cooking but they are usually cooked with pork products. This vegetarian version is flavored with aromatics including garlic, cumin seed, and coriander. You can use this recipe as a base for a delicious black-eyed bean stew or salad. Soak the beans overnight to cut down on cooking time.
Ingredients:
1 16 oz bag black eyed peas
1 tablespoon coconut oil
1/2 teaspoon coriander seed
1/2 teaspoon cumin
one onion, diced
salt to taste
Directions:
Put the beans in the crock pot, with about an inch or two of water extending over the beans. All of the ingredients went into the crock pot, and it simmered for six hours. Once cooking time was complete, the black eyed peas were ready to eat.
