Have a decadent dessert without breaking your diet. These Lemon and Blood Orange Gelée Parfaits are brought to you by Martha Rose Shulman, who shares her healthy recipes with The New York Times. In this installment, she created a jello treat that will put boxed mixes to shame. And, at only 160 calories, these parfaits wont do damage to your waistline.
Lemon and Blood Orange Gelée Parfaits
Ingredients:
- 3 tablespoon powdered unflavored gelatin
- 1 3/4 cups water
- 1/2 cup and 2 tablespoons sugar
- 2/3 cup strained freshly squeezed lemon or Meyer lemon juice
- 3 1/2 cups freshly squeezed blood orange juice, all but 1/2 cup strained of pulp
