Salmon croquettes from Mother Rimmy are a light meal that celebrates this seasonal fish. Fresh or canned salmon is combined with green onions, mayonnaise, egg whites, and breadcrumbs before they are formed into patties and pan fried. For an even healthier version, you can bake these croquettes. You can also turn these croquettes into sliders by simply placing them within a bun with lettuce, tomato, and a touch of mayonnaise. At 214 calories a pop, you will be saving on calories but not sacrificing flavor.
Ingredients:
15 ounces fresh or canned Alaska salmon
1/4 cup plus 2 tablespoons fat-free mayonnaise, divided
1/4 cup dry bread crumbs
1/4 cup chopped green onions
1 tablespoon lemon juice
1 teaspoon Cajun seasoning
1 teaspoon Dijon-style mustard
Directions:
In a medium bowl, combine salmon, 1/4 cup mayonnaise, bread crumbs, green onions, egg white, lemon juice and seasoning. Mix well; shape into four 1/2-inch thick patties. Melt margarine in a large nonstick skillet over medium heat until hot. Add salmon croquettes; cook 3 to 4 minutes per side or until golden brown. Meanwhile, combine remaining 2 tablespoons mayonnaise and mustard. Serve sauce and lemon wedges with croquettes.
