Ever wonder what to do with the garlic scapes you see at the farmer's market? Garlic scapes, those long green onion-looking things with a bulb tip, are the tender and delicious flowering stalks of garlic plants. We usually simply throw them on the grill or blend them with other typically composted herb tops to make a flavorful herb compote, but we love this twist on a Persian rice dish known as sabzi polo from Kitchen Table Scraps. In her recipe she uses an herb-infused oil to add flavor and brightness to rice, then tops the dish with garlic scapes and fava beans (also in season right now). The result is a farmer's market fresh dish that's both healthy and vibrant!
Green Rice with Fava and Garlic Scapes and Beans

1 bunch cilantro
1 bunch dill
a small handful of mint
9 scallions
1 pound fava beans (in their pods)
6 garlic scapes
3 cups white basmati rice
1/2 teaspoon ground turmeric (optional)
3 tablespoons butter
1 teaspoon salt
