On September 29, the world lost a culinary icon. Marcella Hazan, the grand dame of Italian cooking, passed away at the age of 89. Marcella changed the way Americans cook Italian food. A self-taught cook, she embraced simplicity and believed quality ingredients were key. Her 3 Ingredient Tomato Sauce (enhanced only with onion, butter and salt) and Lemon Roasted Chicken (salt and lemons are all you need) are classic examples of her approach to delicious authentic Italian cooking.
I had the opportunity to meet her and her husband Victor a few years ago while she toured for her then just-released memoir Amarcord: Marcella Remembers. We shared stories of Italy and she signed my beloved, well-worn copy of Essentials of Classic Italian Cooking. Out of hundreds of cookbooks it's one that sits amongst a select few in my kitchen.
