We love the versatility of endive, those little torpedo-shaped leafy vegetables found in both red and pale green varieties. Endive is great raw or cooked, is available year-round and packs a healthy punch in it's tender leaves. At only 1 calorie per leaf they're a great substitute for crackers (crumble a little blue or goat cheese in a leaf cup and serve!), and it's loaded with vitamins, minerals, and complex fibers. And, did you know that just one cup of raw endive per week reduces the risk of ovarian cancer by a whopping 75%?! That alone makes us run to the store for a few heads of this delicious green! Try this awesome endive salad with avocado, bacon and a spicy chipotle ranch dressing from California Endive.
