Caramel Chicken

Rich and flavorful, this recipe is a close cousin to one found in a Bon Appetit magazine. It's a sure winner in your family as well. 

Caramel Chicken

3 Tbsp oil

4 lbs chicken breasts (the original recipe recommends bone in legs and thighs-I concur)

Salt

2 Tbsp minced garlic

1 cup water

2/3 cup packed brown sugar

1/2 cup plain rice vinegar

1 inch fresh ginger, sliced into 1/4 inch slices

2 cups chicken broth

1/2 cup soy sauce (I used Tamari-GF)
