The arrival of Spring brings with it large amounts of fresh veggies to be used for spicing up recipes. And what better way to celebrate nature's fresh bounty then slapping it on top of a pizza?
Ingredients:
- 12 ozs artichoke hearts (marinated, drained well reserving marinade hearts quartered if whole)
- 1 bunch asparagus (pound trimmed cut into 2 inch pieces and halved lengthwise if thick)
- 1 pt cherry (grape tomatoes halved)
- 1 lb pizza doughs (thawed if frozen and divided in half)
- coarse salt
- ground pepper
- 7 ozs gruyere cheese (grated 3 cups)
