Sausage and red pepper quiche from Pinch of Yum is a make-ahead brunch dish. The hearty savory pie is packed with wild rice, breakfast sausage, spinach, and of course eggs. This is a crust-less quiche but if you love pie crust, feel free to use it. If you are planning on serving this quiche for Mother's Day, you can prepare this dish a day or two in advance and re-heat in the oven for a couple minutes just before serving.
