Between lessons and classes and work, we do a lot of running around. To stave off the quick trip the drive through, I like to keep healthy, filling snacks on hand for everyone. The easiest way I find to get the good stuff into some form that everyone likes, is to make granola bars. There is a lot of protein and nutrition packed into each bite, and the kids can never say no to something so tasty.
I like to start with a good homemade granola and then make bars or chunks out of the recipe. The secret is keeping the sweetness to a minimum, but including lots of chewiness and interest by adding plenty of different ingredients. Once you taste a good homemade granola bar, you won't be able to go back to the store bought, super sweet variety ever again.
A final tip, make a double batch of bulk granola and keep it in the freezer. Then, when you need granola bars, simply add the extra ingredients and your work time is cut in half. It's a fast food that you can feel good about serving.
