Fresh green beans combined with juicy garden tomatoes make the end of the season more bearable. Both veggies are ripe at just the right time to make this quick and easy salad. It's perfect for a light lunch or a side with dinner.
Green beans are one of our favorite vegetables to grow during the summer. They can be planted and replanted, so we can enjoy them right up to the frost. Now that September is here, our late gardens are full of ripe tomatoes and this is a delicious way to use them up. Thanks to Foodista contributor, Kristen Davis for this dish.
1 Pound Fresh Green Beans
1 Haas Avocado
1 Cup Grape Tomatoes
¼ Cup Cilantro
½ Tablespoon Lime Juice
1 Tablespoon Queso Fresco, crumbled
½ Tablespoon Kosher Salt, to taste
½ Tablespoon Pepper, to taste
