When the kids have soccer practices, piano lessons and homework, it can be hard to manage getting dinner on the table at a reasonable hour. This recipe allows you to spend more time together at the table than in the kitchen cooking. This meal can be served on its own or you can make a simple side salad or roasted vegetables that can bake alongside the pie.
Chicken Tamale Pie

1/2 cup fat free milk
1/4 cup egg substitute
1 1/2 tablespoon taco seasoning, divided
1/4 teaspoon ground red pepper
1 (14 3/4 ounce) can cream-style corn
1 (8.5 ounce) box corn muffin mix (such as Jiffy)
1 (4 ounce) can chopped green chiles, drained
1 (10 ounce) can red enchilada sauce
2 cups shredded cooked chicken breast
3/4 cup shredded white cheese
cilantro and crumbled Cotija cheese for topping
