Flavorful and Nutritious Allergen Free Pastas You Will Love!

I lived in Italy. I love pasta. So imagine my surprise-anger-disbelief-denial-anguish when I was recently diagnosed with Celiac disease. My food world (temporarily) crashed. I've had gluten-free pastas and most of them leave much to be desired. Ironically, the week I was diagnosed, I got an email asking if I'd like to sample Cybele's Free to Eat Superfood Veggie Pastas. I was game for anything! Full disclosure: my husband went to high school with Cybele, we love her, and have all her cookbooks. She even spoke at our International Food Blogger Conference in 2011. But I promise you, dear readers, this is a 100% true and authentic review of her pasta.

Cybele is a mom, a passionate cook and baker, a cookbook author, the creator of a successful food product line, and she has food allergies. Take it from me, when you can't eat something you get really good at cooking things you can eat. And Cybele has mastered that. Her delicious recipes and her product are all free of the top 8 food allergens, so there is no dairy, no wheat, no peanuts, no fish, no eggs, no tree nuts, no soy, and no shellfish. What her new rotini (corkscrew) pastas ARE full of are veggies, protein, and flavor. Woohoo, flavor!! Each serving boasts up to 25 grams of protein and more than a full serving of vegetables, and there are no more than 3 or 4 ingredients in each one.

Superfood Green contains green lentil, kale, spinach, and broccoli.

Superfood Orange contains red lentil, pumpkin, and butternut squash.

Superfood Purple contains red lentil, beet, sweet potato, and carrot.

Superfood Red contains red lentil, tomato, and red bell pepper.

Superfood White contains green lentil, cauliflower, and parsnip.

That's it! No unpronounceable ingredients.  

We had the Red one simply tossed with Extra Virgin Olive Oil and Parmesan cheese (yum), the Green Rotini with sautéed garlic, cherry tomatoes, and fresh basil (fresh and delish!), and the Purple one tossed with roasted vegetables for a pasta salad (simple perfection). They are tender (not chewy like so many gf pastas) and the vegetable flavors really shine through. Plus, what kid wouldn't like colorful pasta?
