For our 11th day in “The 12 Days of Christmas Cookies” series I’m featuring a scrumptious chocolate cookie recipe from one of our community contributors, Holly Sander, from the amazingly delicious blog Taste and See. Each dish that comes out of her kitchen is truly a winner, and her festive Peppermint Marshmallow Hot Chocolate Cookies simply knock it out of the park. They’re easy to make - a bonus since we’re all so busy this time of year! - and friends and family will adore them. Who wouldn’t love a decadent chocolate cookie studded with marshmallows, drizzled with ganache, and topped with crushed candy cane!? I know I would. Let’s get baking…
Peppermint Marshmallow Hot Chocolate Cookies
From Taste and See
Makes 24 cookies
For The Cookies:
1 ¾ cups all-purpose flour
¾ cups cocoa powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened (1 stick)
1 cup sugar
1 large egg
½ cup almond milk (or regular milk)
1 teaspoon peppermint extract
1 teaspoon vanilla extract
10 ounces mini-marshmallows
8 mini candy canes gently broken into small pieces (or use 4 large-sized candy canes)
For The Chocolate Ganache Drizzle:
3/8 cup heavy whipping cream
5 ounces semi-sweet chocolate morsels
