Thai Cucumber Salad (By Roz)

Ingredients
2 cucumbers, seeded, cubed or sliced (you can also peel them if you like)
1/4 cup red or white onions, chopped
1/2 jalapeno pepper, seeded, and finely chopped
Dressing:
2 tablespoons coconut & Sesame Oil or 3 Tbsp Peanut
1/2 cup rice wine vinegar
1 tablespoon soy sauce
1 tablespoon Thai garlic chili pepper sauce
2 tablespoons freshly squeezed lime juice
1/4 cup sugar
1 teaspoon salt
1/4 teaspoon white pepper
Red pepper flakes
1/2 cup finely chop unsalted dry roasted peanuts (optional)

I created my very own version of a Thai cucumber salad after reading and trying numerous recipes. This one tops them all. Tangy, sweet, hot, just the right amount of spice for a little bite, and lime! Simply perfect! So simple and healthy too! I hope that you enjoy!

Hi Sandy, At a glance, I think that you added "coconut oil" to the recipe. How did it taste? I have not had it with this addition. Thank you for adding this to one of your favorites! I just adore this recipe and ate the entire bowl by myself (and that could easily feed 4 - 6 people).
