Vegan Donuts

Ingredients

2 cups flour
1/2 cup sugar
2 1/2 teaspoons baking powder
2 tablespoons arrowroot powder
2 tablespoons water
3/4 cup rice milk
1 teaspoon vanilla extract
4 teaspoons oil

Preparation

Preheat oven to 325 degrees.

Mix flour, sugar, and baking powder.

Mix arrowroot powder and water, then add rice milk, oil, and vanilla, mixing until well blended.

Pour batter into a greased donut pan.

Put in oven and bake for 8-10 minutes or until done.

Dip into a mixed sugar glaze of powdered sugar and water or roll in a bag filled with cinnamon sugar.

If you don't have a donut pan, you can use mini bundt pans. Another, more time consuming option is to roll out and shape by hand and then bake on a cookie sheet; be sure to grease the pan so they don't stick. If you have a commercial egg substitute powder, you may use that instead of the arrowroot powder, though you may need to also reduce the baking powder, since they usually contain a leavening agent as well.
