Heat oil in a fry pan and saute garlic, onion and ham until soft. Add tomatoes and herbs, season and set aside to cool.

Beat eggs together and add onion/tomato mixture and parmesan cheese. Mix well. Melt the butter in a pan, pour in egg mixture and cook over low heat for 5 minutes, do not stir. Place pan under grill to just set the top without browning.

Cut into wedges and serve with fresh tomato sauce and salad.
