Cajun Cod

Ingredients

1 medium onion chopped
1 green pepper chopped
1 clove garlic minced
1 teaspoon butter
2 tomatoes seeded and chopped
cup dry red wine
teaspoon dried thyme
4 5 oz. cod fillets
2 tablespoons lemon juice

Preparation

Saute the onion, green pepper and garlic in butter until tender. Add the tomatoes, wine, thyme and cayenne. Bring to a boil.

Add the cod, reduce the heat, cover, and simmer for about 10 minutes ot untilthe fish flakes.

Add the lemon juice before serving.
